The Cow King is the boss of the Secret Cow Level, and the key to being able to open the portal. You do not want to kill him, if you wish to remain able to create the red portal yourself. The King is always lightning enchanted, which makes him easier to pick out of the crowd, and he's always found within or very near the corral area.
